No-bake Brownie

Splurge on your secret craving, guilt-free, with this no-bake, vegan brownie recipe.

Ingredients

Makes 16 brownies, each of 1.5 sq. inch

Walnuts: 3 cups
Dates, pitted: 16
Cocoa powder (100% will be better): 1.5 cup
Rock Salt: ½ tsp
Water: 1 tsp
Vanilla essence: ½ tsp
Dry grated coconut: ½ cup

Method

List

  • Finely grind the walnuts in a food processor/blender.
  • Add salt, dates and mix until it starts to stick together.
  • Add cocoa powder, vanilla and water. It should now be mixed and dough-like.
  • Place on a flat plate/baking tray and press down to a 1.5 inch thickness.
  • Sprinkle the dry grated coconut.
  • Place in the freezer for 10-15 minutes. Slice into 1.5 inch thick squares.

I love that its vegan! Like how they put 'guilt-free'. Chickens do suffer for their eggs & are kept in tiny cages smaller than their sizes. Its terrible & cows get abused as well.

Had fun trying this recipe today! I did the recipe as written above and found that the cocoa was way too strong for me. I decided to experiment using a half batch. Made the half recipe without any cocoa and then started adding the cocoa in by tablespoons (1 Tbl = 1/16th cup) and found that 1.5 tablespoons, with an extra dash of salt, was perfect! So for the full recipe, I would recommend starting with 1/8th cup cocoa and work your way up to your desired cocoa-ness!!! It tasted really great without any cocoa too (can't go wrong with dates and walnuts)! Family loves it straight out of the freezer. Thanks Isha!
