Quick Recipe:

  • Peel one ridge gourd and keep the peels aside (add a few small pieces too).
  • Heat oil and roast groundnuts till golden.
  • Add dry red chilies and sesame seeds; toast till aromatic.
  • Add ridge gourd peels and pieces; sauté well.
  • Add chopped tomatoes and cook covered for 5 minutes.
  • Add a splash of water and cook gently.
  • Mix in grated coconut and chopped coriander (with stalks).
  • Add salt and a little tamarind water to balance flavours.
  • Cook for a few more minutes, then cool completely.
  • Blend coarsely with a spoon of water — not too smooth.
  • Serve with rice, rotis, or parathas.
