Quick Recipe:
- Peel one ridge gourd and keep the peels aside (add a few small pieces too).
- Heat oil and roast groundnuts till golden.
- Add dry red chilies and sesame seeds; toast till aromatic.
- Add ridge gourd peels and pieces; sauté well.
- Add chopped tomatoes and cook covered for 5 minutes.
- Add a splash of water and cook gently.
- Mix in grated coconut and chopped coriander (with stalks).
- Add salt and a little tamarind water to balance flavours.
- Cook for a few more minutes, then cool completely.
- Blend coarsely with a spoon of water — not too smooth.
- Serve with rice, rotis, or parathas.
