Crunchy Carrot Apple Pineapple Salad

INGREDIENTS

For the salad

1 large carrot

1 medium-sized apple

½ cup pineapple, chopped

¼ cup raisins (or dates), chopped into small pieces

¼ cup roasted groundnuts, chopped into small pieces

½ cup coconut, grated

¼ cup roasted sesame seeds

For the dressing

Juice of 1 orange

Juice of 1 lemon or lime

2 tablespoons honey

Black pepper, coarsely ground, to taste

Salt to taste

½ cup olive oil

METHOD

  • Wash, peel, and grate the carrot.
  • Wash the apple and chop it into small pieces.
  • Chop the raisins or dates into small pieces.
  • Roast the groundnuts. Then chop them into small pieces.
  • Roast the sesame seeds carefully.
  • Put the carrot, apple, and pineapple in a deep bowl. Add the groundnuts, dry fruits, coconut, and sesame seeds, and mix well.
  • For the dressing, in a small glass bowl, whisk together orange and lemon juices, honey, salt, and pepper.
  • Holding the measuring cup of olive oil above the bowl, pour the oil in a thin, steady stream, whisking constantly until the texture is slightly creamy.
  • Toss the salad well and serve.
