Refreshing Tomato Salad with Pomegranate and Herbs

INGREDIENTS

Salad:
3 cups of small or cherry tomatoes, halved or quartered
Seeds from 1 whole pomegranate
½ yellow capsicum, sliced into thin strips
½ cup cabbage, finely chopped
⅓ cup fresh basil leaves, gently torn
⅓ cup fresh mint leaves, gently torn
100 grams of paneer, tofu, or feta cheese, broken into small chunks

Dressing:
¼ cup freshly squeezed pomegranate juice
1 tablespoon freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
2 tablespoons extra virgin olive oil
1 teaspoon honey
Rock salt or sea salt, to taste
Freshly cracked black pepper, to taste

Garnish (optional):
½ teaspoon sesame seeds, lightly toasted
½ teaspoon thyme, dried and ground

METHOD

  • Begin by preparing your tomatoes. Depending on their size, halve or quarter them so that they are uniform in size and place them into a spacious mixing bowl.
  • Optionally, marinate the paneer, tofu, or feta cheese with a little lemon juice and salt. Set aside to allow the flavors to infuse while you continue with the next steps.
  • Remove the seeds from the yellow bell pepper and slice it into thin strips.
  • Finely chop the cabbage, and set aside.
  • Use your hands to gently tear the basil leaves and mint leaves into pieces and set them aside.
  • Create the salad dressing by combining the pomegranate juice, lemon juice, orange juice, extra virgin olive oil, and honey in a small bowl. Season the mixture with salt and pepper, and whisk it together until fully combined.
  • Add the pomegranate seeds, yellow bell pepper, and cabbage to the bowl with the tomatoes. Toss in the basil and mint leaves.
  • Drizzle the prepared dressing over the salad ingredients, and toss everything gently to ensure the vegetables and herbs are well-coated with the dressing.
  • Transfer the mixed salad onto a serving platter or bowl. Scatter the crumbled paneer, tofu, or feta cheese evenly over the salad.
  • For the optional garnish, sprinkle the toasted sesame seeds and ground thyme on top of the salad right before serving for an aromatic finish.
  • Serve the salad immediately, offering a colorful and flavorful experience that pairs the juiciness of fresh tomatoes with the sharpness of pomegranate and the creaminess of cheese.
